For the last time this year the friends of CÀRN MÒR’s und The Maltman’s single malts met in s‘Baumgarten in Linzerstrasse 297, 1140 Wien.
We followed our chef, Peter Weginger, from his old restaurant in the 3rd district to his new location in Linzerstrasse adjacent to the Casino Baumgarten. Obviously it was the right decision according to the comments of great number of our guests (unfortunately we had to turn down some of the applications due to the number of applicants). It was the first event at this venue and a successful opening.
The Cullen Skink and the stuffed breast of veal as well as the Christmas pudding flambéed with a 20 year old Tomatin were gorgeous.
The line-up of the single malts following the meal:
Aultmore 2010 HH @ 46 %
Royal Brackla 2001 HH @ 46 %

G&P Auchroisk 1999 HH + Port Pipe @ 53.5 % 3.12.1999/8.6.2015, cask # 13568-9

Tamnavulin 1991 HH @ 50.6 % 1.3.1991/26.10.2015, cask # 1139

A novelty was introduced – the Vinturi Spirit. No, this is not a whisky. This is a device to decanter precious whiskies, i.e. induce air into the whisky prior to drinking it. At the beginning we were very sceptical. But after having tested this device excessively in our office we were convinced and felt obliged to introduce the Vinturi Spirit to our customers. Hardly to believe – but all whiskies, young or old, immediately loose the spiky alcoholic touch and the flavours develop in a stunning manner. One achieves the identical result as if the single malt was exposed to air in a glass for more than 20 minutes.
But now the focus is on the whiskies – of the three CÀRN MÒR Strictly Limited Editions the Aultmore 5 year old was believed to be a lot older. Yes, we advocate the policy of declaring the age of any whisky we bottle despite some scepticism we might encounter. That the 21 year old Miltonduff was acclaimed did not astonish us at all.
Our Special Bottling – the G&P Auchroisk 1999 Niepoort Port Finish – won over, as in previous tastings, with the felicitous harmony of alcohol, cask character of the bourbon hogshead and the sweetness of the Niepoort port wine.
Auchentoshan, Glen Garioch und Tobermory – was a successful journey through the various regions of the Scottish single malt whisky country.
Then the Tamnavulin 1991 – a guest’s remark: „ … this is it, the classic Scottish single malt! “ Nothing is to be added!
A 23 year old Springbank bottled at cask strength – you do not find this very often in a tasting. Despite the fact that expectations were flying high all of the participants were enthusiastic.
The line-Up was ambitious in its own sense. What should be selected as the final dram? Thank goodness The maltman bottled one of his very rare old casks for the year end season.
A 43 year old Ben Nevis, distilled at a time when cask management had all the choices to them and only the best of casks were allowed to be home for the maturing single malt.
A worthy finish to an exciting and amusing tasting among friends!
